ROAST & SWEET POTATO FRIES

Preperation Time
approx 90 Minutes
2-4 Persons

This dish works with any type of protein, here we suggest to use a pork roast.

The items:
1-2 tbsp. Coconut or another oil of choice suitable for high heat
2-3 tbsp. of the SPICE BLEND OF THE AMERICAS
1 tbsp. brown sugar
As much as you want of ORIGINAL BBQ SAUCE
Majo if you like

1-2 Sweet potatoes, cut into strips
125 ml corn flour
90 ml Club Soda
Himalaya salt or other

The action:
Preheat oven to 230° C

Pick your favorite part of the pork. We love neck and ribs for this dish. 
Rub with coconut oil, the SPICE BLEND OF THE AMERICAS and the brown sugar. 
Insert a food thermometer in the thickest part of the roast. 
Place in oven.
After 10-15 minutes turn temperature down to 180° C and bake till thermometer reads 70-73 ° C.

Optional: At 60° C brush ORIGINAL BBQ SAUCE over the top and sides of the roast. 
Repeat a few times and use the grill function if you want it extra sticky. 

Let the roast rest for about 5-10 minutes before cutting.

Peel and cut Sweet potatoes into Fries. Wash in cold water, pat dry. 
While the roast is resting, toss the sweet potatoes in a mix of corn flour and Club Soda. 
Pour coconut oil in a deep casserole, covering 5 cm of the bottom, bring to approx. 180° C. 
Fry the sweet potatoes until golden brown, place on paper towels to dry and crisp.
Sprinkle with your favorite salt.

Plate and serve with the ORIGINAL BBQ SAUCE by itself or mixed with mayo!
